Seven Springs Vineyard is a premium wine producer, situated on the R320 Hemel-en-Aarde Valley road, between the seaside town of Hermanus and the Spa Town of Caledon, in the picturesque Western Cape, South Africa.
The vineyard nestles between Shaws Mountain to the north and the Teslaarsdal Mountain Range to the south, with Walker Bay and the Atlantic Ocean beyond these mountains. It is this oceanic influence, coupled with the shale derived soils, known locally as Bokkeveld Shale, that gives their vines the potential to produce exceptional grapes from both north and south facing vineyards.
Noble varieties, Chardonnay, Sauvignon Blanc, Syrah and Pinot Noir, have been planted to express the full potential of each cultivar. Tim and Vaughan Pearson purchased the land in 2006 and commenced in the vast task of planting this promising but yet to be planted piece of land. With the help of their team, Seven Springs is making big strides in a region that produces some of the best wines throughout South Africa.
Peter Davison (Vineyard Manager) and Riana van der Merwe (Winemaker to 2018) have got plenty of acclaim for this lovely vineyard and its beautifully crafted wines. The winemaking duties has now been taken over by Augustus Dale who is adding his own style to the exceptional Seven Springs wines.
Born in the UK, Augustus Dale has many years of experience in the wine business, having made wines in both France (Burgundy) and South Africa. He brings his passion for cool climate Burgundian varietals to Seven Springs, with an emphasis on best practice in vineyard.

Seven Springs Sauvignon Blanc 2020
Pale straw in colour. On the nose there is elderflower, cox apple and some grapefruit peel. The flavours are of more grapefruit and apple but also tantalising ripe fruit which continue to the finish. It is a medium bodied refreshing wine which has a delicate lasting finish. Vintages released late to show how this Sauvignon is better with a little bottle age!

Fermented and aged in stainless steel, it is its ripeness and lees contact that gives such a lovely aroma: crushed almond melds with citrus peel. Tropical and orange citrus fruit flavours are perfectly balanced by a steely lingering minerality.

Honeyed fruit, lemon and buttery oak are all present on the nose. The flavours are that of candied lemon, pear and Creme Anglais with grippy stone minerality along with the well judged use of second fill barrels means that the fruit and oak are in perfect harmony. Stunning!

Although light salmon in colour, this wine is not light on the flavour front. Flavours of watermelon, candy and grapefruit with a fresh yet elegant acidity. A wine that lingers and entices you to indulge in another sip.

Produced from now 10 year young vines, this Pinot Noir is sophisticated and full of character. It is bright and vibrant in colour with a beautiful balanced red berry flavour, a hint of spice, and an excellent finish. It is a very versatile food wine and will match perfectly with mushroom, duck, beef, lamb or pork dishes. Not to be missed

This 2014 Syrah has red and dark berry fruit with some white pepper and spice rounded by judicious use of oak. A beautifully made wine which is rich yet shows that the winemaker has let the fruit do the talking. Needs decanting..
